"Harvested from the Saint Joseph and Grand Cras subzones, located roughly 500 meters from Guy Breton’s Morgon vineyards, this wine undergoes fermentation exclusively with native yeasts. After harvest, grapes are chilled to 5-6°C to initiate a slow, cool fermentation. The process involves 100% whole-cluster fermentation with brief macerations, timed by sensory evaluation. Prior to fermentation completion, the must is pressed and transferred to barrels. Minimal sulfur is introduced during aging and bottling. This wine is bottled without fining or filtration and is dedicated to Marylou, Guy Breton’s daughter."
