"Olla Rouge is Tom Lubbe's red entry-level cuvée, produced with exceptionally low yields (20 hl/ha) from very old vines grown on chalky, poor soil at 500–650 metres above sea level. The varieties included in the cuvée are Grenache, Grenache Gris, and Macabeu. Following a brief maceration period, Olla Rouge is carefully pressed, allowed to naturally ferment, and matured in concrete using native yeasts. Like all of Matassa's wines, this one is made without the use of sulphur or any other additives; instead, the skillful application of biodynamic farming is the main focus. A glou-glou natural wine with a twist, Olla Rouge is ideal for sharing!"
