"Notes of starfruit, honeysuckly and limestone. Traveling through Champagne years ago, we found the still vin clair wines to be a revelation. The blanc de noirs base wines, not yet sparkling, had the fruit tones that we love in Pinot Noir, but also the focus, freshness and agility of a crisp white wine. We quickly started imagining the SCRIBE version.
We harvest Pinot Noir fruit early in the season and the whole clusters are put immediately to the press for a slow and delicate separation of juice and skins, preventing extraction of any color or bittering tannins, while capturing brightness, vibrancy and an elegant finish."
