Winemaker Notes:
"Prior to 2021 I had been employing a mix of concrete eggs and oak barrels with good results, but in 2021 I decided to ferment and age the Chardonnay in a small oak foudre that I had been previously using for client wines. My hope is that it would bring some of the focus that aging in the concrete did, but still have an enriching effect, similar to a barrel. The best of both worlds, but without having to move the wine around between the two different kinds of vessels. What I found was that the wine aged in the foudre did indeed have some of the focus and linearity of the wine aged in concrete but even more so, and it changed the style of the wine from the pretty, fruit focused style I had previously been making to something tighter, more linear, even piercing. It was fascinating to watch the wine evolve in cask, and I look forward to how it develops in the bottle. "
