Winemaker Notes:
"Aromas of white pepper, violets, raspberries, green olives and freshly toasted oak. Textured and loaded with spicy red fruits, peppercorns, violets and creosote. Medium bodied and firm, this wine will continue to evolve for a decade and reward the patient. In the meantime, serve with a fatty Cassoulet, Wagyu Burgers, BBQ Ribs hot off the grill or a Big Mac, whatever floats your boat."
About the Vineyard:
"This bottling is a first for Pax Wines, but many of you will recall a similar blend from the Wind Gap Wines line-up. Mother Nature forced our hand with some devastating fires that forced us to pick these sites earlier than we would have hoped. The upside is this 100% Syrah from our cool coastal sites, slightly leaner than the 2020 North Coast, this Syrah is lovely and classic in its spicy vibrancy."
