"One of our more creative sparklers, this is a blend of Valdiguié (formerly thought to be Gamay) from Redwood Valley and Pinot Noir from Enz Vineyard in Lime Kiln AVA. The Valdiguié (77% of the blend) was whole-cluster pressed while the Pinot Noir (23%) was made as a traditional red wine. Both aged in neutral French oak before being racked to stainless and blended. Bottled with 23 g/l liqueur de tirage. No dosage."
