Wild Hog Vineyards is a small, family-owned and operated winery in the hills between Cazadero and Fort Ross on the Sonoma Coast.  It's truly off the beaten path - almost impossible to find if you don't know where it is.  Owners Daniel and Marion Schoenfeld specialize in organically farmed Pinot Noir, Zinfandel, and Cabernet.  They've been making wine since 1977 and in 1990 they opened their own entirely solar and hydro-powered winery.  They were some of the first minimalist winemakers on the American wine scene.  They keep harvests small and steer clear of synthetic chemicals, focusing on bringing out the pure flavor and balance of the wines.  Everything is done carefully and tended to by hand.  Wild Hog Vineyards is a small production winery and has kept a remarkably low profile.  They remain true to their roots and continue to produce what has come to be known as "90's style wine".  They are known for producing balanced, clear, and food-friendly wines with excellent concentration and modest cost.  Wild Hog Vineyards is a staff and customer favorite here.  In fact, when we first started our online store, Wild Hog wines were some of our first flash sales.  The 2018 Wild Hog Vista Cabernet Sauvignon has firm tannins and good acidity.  It has flavors of cedar, nutmeg and dark plum.  Like with all Wild Hog wines, it requires decanting or cellaring for best enjoyment.  After letting it breathe, this Cabernet truly blossoms in the glass, revealing a delicious and balanced wine.  Enjoy!

Winemaker Notes: 

"The 2018 Wild Hog Vista Cabernet Sauvignon is made from 80% Cabernet, 12% Cabernet Franc, and 8% Malbec from Nova vineyard in Dunnigan Hills.  This wine is aged for 18 months in American Oak and, like all Wild Hog Vineyard wines, benefits from breathing.  It initially has a tight nose, but after 30 minutes it opens up with hints of cedar and nutmeg. The wine continues to evolve in the glass, revealing flavors of dark plum and firm tannins with good acidity.  At Wild Hog Vineyard, we believe in minimal intervention, using only yeast and a small amount of sulfites in our winemaking process.  While it may take some time to fully open up, the result is a truly remarkable, delicious and balanced wine."
