"In 2018 we took a bright and nervy block of Vermentino and fermented it on the skins with the intention of making a Crackling. After a year of aging we sweetened it up with a little of the 2019 Vermentino that was hitting peak fermentation. We promptly bottled it. The result is an aromatic, naturally sparkling beauty."
Tasting Notes:
"Musky apricot aromas are intensified by the fizz, while seasonally appropriate sage and pine play off the fruit. There is a joyful grapey freshness from the recent fermentation in bottle. The playfully urgent mousse and a little bit of tannin make for an amazing texture. This is an all around fun wine."
